Dal Tadka (Indian Yellow Lentils with Garlic Tempering)
Dal tadka is a comforting Indian dish of soft yellow lentils finished with a sizzling tempering of ghee, cumin, garlic and dried chilies. This approachable North Indian–style version uses toor dal (split pigeon peas), a simple onion-tomato masala and a fragrant final tadka. Serve it with steamed rice or roti.
Ingredients
- 1 cup (200 g) dry toor dal (arhar dal; split pigeon peas), rinsed
- 3½ cups (850 ml) water, plus more as needed
- ½ tsp ground turmeric
- ¾ tsp fine salt, then adjust to taste
- 2 tbsp ghee, divided (use neutral oil for a dairy-free version)
- 1 small onion (about 100 g), finely diced
- 1 medium tomato (about 120 g), finely chopped
- 1 tbsp (10 g) grated fresh ginger
- 6 garlic cloves, divided: 3 minced and 3 thinly sliced
- 1 small green chili, slit (optional)
- 1 tsp ground coriander
- 1 tsp whole cumin seeds
- 1–2 dried red chilies, left whole or broken (optional)
- 1 small pinch asafoetida (hing), optional; check label for wheat
- 2 tbsp chopped fresh cilantro (coriander leaves)
- 1–2 tsp lemon juice, to finish (optional)
- Steamed basmati rice or roti, to serve
How to make dal tadka
- Rinse the toor dal in several changes of cool water until the water is mostly clear. Put it in a medium saucepan with 3½ cups (850 ml) water and turmeric. Bring to a boil, skimming foam if needed.
- Reduce to a gentle simmer, partially cover and cook 40–55 minutes, stirring occasionally, until the lentils are very soft and easily mashed. Add small splashes of hot water if the pot becomes dry. Mash or whisk lightly for a creamy texture; season with ¾ tsp salt.
- While the dal cooks, heat 1 tbsp ghee in a skillet over medium heat. Cook the diced onion for 6–8 minutes until golden at the edges. Add the minced 3 garlic cloves, ginger and optional green chili; stir 30–60 seconds until fragrant.
- Add chopped tomato and ground coriander. Cook 5–7 minutes, stirring, until the tomato softens and the mixture becomes thick. Fold this masala into the cooked dal; simmer together 3–5 minutes. Add water to reach a pourable, creamy consistency and taste for salt.
- Just before serving, warm the remaining 1 tbsp ghee in a small dry skillet over medium heat until shimmering but not smoking. Add cumin seeds; let them crackle for about 10–20 seconds. Add the 3 sliced garlic cloves and dried red chilies; cook about 30–60 seconds until the garlic is light golden, not dark brown. Turn off the heat and briefly stir in the optional hing.
- Carefully pour the hot tadka over the dal in a heatproof pot or serving bowl; it may sputter. Cover for 30 seconds to capture the aroma, then sprinkle with cilantro and optional lemon juice. Serve hot with basmati rice or roti.
Tips and substitutions
Texture: Toor dal should collapse easily before you add the masala; if it is firm, keep simmering. Dal thickens as it cools, so add hot water when reheating.
Spice timing: Whole cumin should sizzle briefly; garlic should turn light gold. Burned spices taste bitter.
Substitutions: Use neutral oil instead of ghee for a vegan version. Hing is optional and may contain wheat flour, so check packaging if avoiding gluten.
Make-ahead: Prepare the lentils and masala in advance; make the final tadka just before serving for the freshest aroma.
Food safety and storage
Refrigerate cooked dal in shallow, covered containers within 2 hours (within 1 hour if above 90°F / 32°C). Keep refrigerated at 40°F / 4°C or below and use within 3–4 days. Reheat leftovers to 165°F (74°C); bring soup-like dal to a boil while stirring. Ghee contains dairy; some compounded hing contains wheat.
